Peach Pie Fruit Salad

I shared this years ago on my old blog (hence the not-so-great pictures :) ).

..but with the 4th coming up and fun BBQ's and parties, I thought I'd put this out there again. I am drooling just thinking about it.

Enjoy my FAVORITE fruit salad... Its absolutely perfect for summer!!

you need:

fruit of your choice

(I use strawberries, grapes, and bananas)

1 can Peach Pie Filling

1-2 cups of sugar

yep, Peach Pie Filling.

It is the secret to this sweet yumminess.

(I've also heard of people using apple or cherry pie filling but haven't tried those myself...

I'm a peach girl.)

cut up your fruits

(I left the grapes whole this time, but have halved them before)

Add the pie filling and sugar and stir gently until well coated!

Now eat up this fresh fruity goodness...

CHICKADEES!! (a last minute Easter treat!)

Here's a fun Easter treat I shared last year - thought I would repost!
It's great for school Easter parties!

If you need an easy and yummy last-minute Easter treat..
Meet my Easter Chickadees!! :)

what you need:
Double Stuffed Oreos (I used the "golden" ones)
yellow icing
pretzel sticks
colored marshmallows (I used the pink and orange ones)
mini chocolate chips or candy eyes
optional: coconut mixed in with icing to make the chicks look "fluffy"

put the icing in a bowl and stir it to make it fluff up a bit.
spread it on the oreos...you can cover the sides (a bit messier!), or just on the top.

add the mini chocolate chips or candy eyes
tear the marshmallows in half and add that as a "beak"
then stick the pretzels into the oreos as legs.
and there you have your little chicky!!! :)

Crock Pot Chili Awesome

I've never really just "made up" a recipe all by myself,
but I went for it this time!
and to be honest, I'm pretty proud of myself...
I even named it. :)

and yep. it IS awesome.

(this recipe makes a pretty huge pot, good for guests or lots of leftovers!
Or you could half it for just the fam, and probably still have some to save!)


what you need:

2.25 lbs ground beef
(OR you could use ground turkey!)
2 cans (28 oz each) diced tomatoes (i used petite)
2 cans (16 oz each) tomato sauce
1 can Rotel (I use just about 3/4 of the can)
2 cans (15 oz) black beans, undrained
2 cans (15 oz) kidney beans, undrained
4-5 TBSP Chili Powder
1/2 tsp garlic powder
1/2 tsp cumin
a few dashes of cayenne pepper, to taste
salt and pepper

Corn Bread Mix (I am faithful to the good ole Jiffy box.)

Make your corn bread however you make it.
(again, i LOVE me some Jiffy cornbread, plus its like 50 cents a box)

brown your ground beef and drain grease.
I always put a little of the spices in while browning,
like salt, pepper, and just a little cumin and chili powder.
Add meat to the crock pot.
Then add everything else.

yes, it seriously is that easy.

let it cook in crock pot for about 4-5 hours on high.

Now go enjoy...while I do love chili with Fritos,
I have really started loving it over cornbread!

Our girls love this too, AND its super easy for Mama.
win win. :)
This would also be really great for a large family or group gathering!!

I give you....

you need:
1 can pumpkin puree
1 12 oz can evaporated milk
3 eggs
1 cup sugar
1/2 tsp. salt
4 tsp pumpkin pie spice
1 package yellow cake mix
3/4 cup butter, melted
1 cup chopped walnuts

preheat to 350 degrees.
grease a 9x13 dish.

in a large bowl, mix pumpkin, evap milk, eggs, sugar, salt, and pumpkin pie spice.
Mix well.

pout the batter into the pan.
sprinkle the bag of cake mix onto the batter.
(I kindof stirred it in a little bit.)

drizzle your melted butter over the mix.

Sprinkle walnuts on top and bake for about 45-55 minutes.

Put vanilla ice cream on top, and ENJOY!!!!

this is a DELISH paleo-friendly (and great Fall) dessert you will make like all. the. time.
trust me, it's good. :)

SWEET POTATO BROWNIES

what you need:
1 sweet potato (baked)
3 eggs, whisked
1/4 cup Coconut Oil, melted
1/3 cup raw honey
1/2 cup Chocolate Chips (Enjoy Life brand is best, but I used Nestle Dark Chocolate)
3 TBSP Coconut flour
2 TBSP unsweetened Cocoa powder
1/4 tsp baking powder
1/4 teaspoon vanilla
1/4 tsp cinnamon

Bake your sweet potato. I bake mine on a cookie sheet for about 1 hour at 425 degrees.
Poking some holes in the potato will help in bake...and also make your little one feel like she's helping. :)

After potato is baked, peel off the skin (it should slip off pretty easily), and mash it up in a large bowl.
(now you can turn oven down to 350 degrees.)

whisk your eggs, and melt the coconut oil.

add all the wet ingredients (coconut oil, eggs, honey, and vanilla) to the mashed up potato.
mix well.

add in all the dry ingredients (coconut flour, baking powder, cocoa powder, and cinnamon)
mix well.

now stir in those chocolate chips. yumm.

Pour it all in an 8x8 baking dish, and bake for 30-35 minutes on 350.
And get ready for your kitchen to smell like heaven.

let them cool just a bit...and ENJOY this delish dessert.
oh, and feel great about yourself that you are enjoying (aka, eating a whole pan of) this yummy, processed-sugar-free, gluten-free, paleo dessert.
